Instructions
1. Prepare the Masa Dough
- In a mixing bowl, combine masa harina, baking powder, and salt.
- Gradually add broth and melted butter or lard, mixing until a soft dough forms.
2. Assemble the Tamales
- Lay a soaked corn husk flat on a clean surface.
- Spread 2 tablespoons of masa dough onto the center of the husk, leaving space at the edges.
- Add a spoonful of scrambled eggs, crumbled chorizo, and shredded cheese to the center of the masa.
- Fold the sides of the husk over the filling, then fold up the bottom to seal.
3. Preheat Air Fryer
- Set your air fryer to 375°F (190°C).
4. Cook the Tamales
- Arrange the tamales in a single layer in the air fryer basket, seam side down.
- Air fry for 15-18 minutes, or until the masa is set and slightly golden.
5. Serve
- Remove tamales from the air fryer, allow to cool slightly, and serve with salsa, avocado, and fresh cilantro.
