  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 cup cooked edamame

For the Sesame Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger
  • 1 tsp garlic, minced

Garnish:

  • Sesame seeds
  • Sliced green onions

Instructions:

  1. Prepare the Tofu:
    • Press the tofu to remove excess water, then cut into bite-sized cubes.
    • Toss the tofu cubes with cornstarch, olive oil, and soy sauce until evenly coated.
  2. Preheat the Air Fryer:
    • Set the air fryer to 375°F (190°C) and preheat for 3 minutes.
  3. Cook the Tofu:
    • Place the tofu cubes in the air fryer basket in a single layer.
    • Cook for 12-15 minutes, shaking the basket halfway through, until the tofu is crispy and golden.
  4. Prepare the Sesame Sauce:
    • In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, ginger, and garlic.
  5. Assemble the Bowls:
    • Divide the steamed rice among four bowls.
    • Top each bowl with crispy tofu, shredded carrots, sliced cucumbers, and edamame.
