Ingredients (Serves 4)
- 1 cup paella rice (bomba or arborio)
- 1 1/2 cups seafood broth
- 1/4 cup dry white wine (optional)
- 1/2 tsp saffron threads, soaked in 2 tbsp warm water
- 1/2 lb large prawns, peeled and deveined
- 1/2 cup diced zucchini
- 1/2 cup diced red and yellow bell peppers
- 1/4 cup frozen peas
- 1/2 cup diced tomatoes
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- Lemon wedges and fresh parsley for garnish
Instructions
1. Sauté the Vegetables
- Heat olive oil in a skillet over medium heat. Add garlic, zucchini, and bell peppers. Sauté until softened.
- Stir in diced tomatoes, smoked paprika, and saffron water. Cook for another 2 minutes.
2. Prepare the Rice Mixture
- Add the paella rice and seafood broth to the skillet. Mix well.
3. Assemble in Air Fryer
- Transfer the mixture to an air fryer-safe baking dish.
- Place the prawns and frozen peas on top of the rice mixture.
