Ingredients

  • 2 Cornish hens (approximately 1–1.5 lbs each)
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 lemon, quartered
  • 4 cloves garlic, whole
  • Optional: Fresh herbs for garnish

Instructions

  1. Prepare the Hens:
    • Rinse and pat the Cornish hens dry with paper towels.
    • Rub the hens with olive oil inside and out.
  2. Season the Hens:
    • Mix the rosemary, thyme, garlic powder, paprika, salt, and pepper in a small bowl.
    • Generously season the hens, ensuring to coat under the skin and inside the cavity.
  3. Stuff the Hens:
    • Place a lemon quarter and one or two garlic cloves inside each cavity.
  4. Air Fry:
    • Preheat the air fryer to 375°F (190°C).
    • Place the hens breast-side down in the air fryer basket. Cook for 20 minutes.
    • Flip the hens breast-side up and cook for another 10–20 minutes, or until the internal temperature reaches 165°F (74°C) when checked in the thickest part of the thigh.
  5. Rest and Garnish:
    • Remove the hens from the air fryer and let them rest for 5 minutes.
    • Garnish with fresh herbs and serve with your favorite sides.
