Instructions

  1. Prepare the Fish:
    • Rinse the fish under cold water and pat dry with paper towels. Make diagonal slits on both sides of the fish to allow the marinade to penetrate.
  2. Make the Marinade:
    • In a bowl, mix garlic, ginger, lemongrass, fish sauce, soy sauce, lime juice, sugar, and vegetable oil.
  3. Marinate the Fish:
    • Rub the marinade all over the fish, including inside the cavity and the slits. Let the fish marinate for at least 30 minutes in the refrigerator.
  4. Grill the Fish:
    • Preheat a grill or grill pan to medium heat. Lightly oil the grill grates to prevent sticking.
    • Place the fish on the grill and cook for 8-10 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
  5. Serve:
    • Transfer the grilled fish to a serving platter. Garnish with fresh cilantro, lime wedges, and red chili slices. Serve immediately with steamed rice or a side salad.
