Ingredients (Makes 6 eclairs)
For the Pastry Shells
- 1/2 cup water
- 1/4 cup unsalted butter
- 1/2 tsp sugar
- 1/2 cup all-purpose flour
- 2 large eggs
For the Custard Filling
- 1 cup milk
- 1/4 cup granulated sugar
- 2 tbsp cornstarch
- 2 large egg yolks
- 1 tsp vanilla extract
For the Chocolate Glaze
- 1/2 cup dark chocolate chips
- 2 tbsp heavy cream
Instructions
1. Make the Pastry Shells
- In a saucepan, bring water, butter, and sugar to a boil. Reduce heat to low, add flour, and stir until a dough forms.
- Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition.
- Transfer the dough to a piping bag fitted with a star or round tip. Pipe 4-inch strips onto parchment paper.
- Preheat your air fryer to 350°F (175°C). Place the piped dough in the air fryer and bake for 10-12 minutes or until puffed and golden. Cool completely.
2. Make the Custard Filling
- In a saucepan, whisk together milk, sugar, and cornstarch. Heat over medium heat until thickened, stirring constantly.
- In a small bowl, whisk egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly, then return the mixture to the saucepan.
- Cook for another 2 minutes until thick and creamy. Remove from heat and stir in vanilla. Cool completely.
3. Make the Chocolate Glaze
- In a microwave-safe bowl, heat chocolate chips and cream in 30-second intervals, stirring until smooth.
4. Assemble the Eclairs
- Slice the cooled pastry shells in half lengthwise. Pipe or spoon custard onto the bottom half, then replace the top half.
- Dip the top of each eclair in the chocolate glaze and let set.
