Ingredients (Makes 6 eclairs)

For the Pastry Shells

  • 1/2 cup water
  • 1/4 cup unsalted butter
  • 1/2 tsp sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs

For the Custard Filling

  • 1 cup milk
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 2 large egg yolks
  • 1 tsp vanilla extract

For the Chocolate Glaze

  • 1/2 cup dark chocolate chips
  • 2 tbsp heavy cream

Instructions

1. Make the Pastry Shells

  1. In a saucepan, bring water, butter, and sugar to a boil. Reduce heat to low, add flour, and stir until a dough forms.
  2. Remove from heat and let cool slightly. Add eggs one at a time, mixing well after each addition.
  3. Transfer the dough to a piping bag fitted with a star or round tip. Pipe 4-inch strips onto parchment paper.
  4. Preheat your air fryer to 350°F (175°C). Place the piped dough in the air fryer and bake for 10-12 minutes or until puffed and golden. Cool completely.

2. Make the Custard Filling

  1. In a saucepan, whisk together milk, sugar, and cornstarch. Heat over medium heat until thickened, stirring constantly.
  2. In a small bowl, whisk egg yolks. Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly, then return the mixture to the saucepan.
  3. Cook for another 2 minutes until thick and creamy. Remove from heat and stir in vanilla. Cool completely.

3. Make the Chocolate Glaze

  1. In a microwave-safe bowl, heat chocolate chips and cream in 30-second intervals, stirring until smooth.

4. Assemble the Eclairs

  1. Slice the cooled pastry shells in half lengthwise. Pipe or spoon custard onto the bottom half, then replace the top half.
  2. Dip the top of each eclair in the chocolate glaze and let set.
