  5. Rest the Meat: Remove the roast and let it rest for 20 minutes, covered loosely with foil. The temperature will rise to 54°C (130°F) during resting.
  6. Slice and Serve: Slice the roast into thick slices and garnish with fresh rosemary and garlic cloves.
