Simple Thai Garlic Fried Rice

Ingredients

For the Rice:

  • 3 cups cooked jasmine rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 5 cloves garlic, finely chopped

  • 1 tsp fish sauce (or extra soy sauce for vegetarian)
  • 1 tsp sugar
  • 1 egg (optional, for added protein)

  • Fresh cilantro leaves
  • Lime wedges

Instructions

  1. Prepare the Garlic Oil:

    • Push the remaining garlic to one side of the pan. Add the cooked rice and break it up with a spatula. Toss to coat the rice evenly with garlic oil.
  3. Season the Rice:
    • Add soy sauce, fish sauce, and sugar. Stir well to combine and cook for another 2-3 minutes.
  4. Add Egg (Optional):
    • Push the rice to one side of the pan and crack the egg into the empty space. Scramble the egg until fully cooked, then mix it into the rice.
  5. Garnish and Serve:
    • Transfer the fried rice to a serving plate. Top with crispy garlic, green onions, cilantro, and lime wedges. Serve hot.
